Combine 1 cup Nishiki Rice and 1.25 cups water in medium saucepan. Bring to a boil; cut back warmth to low and simmer, covered 20 minutes, or until moisture is absorbed. Take away from warmth; let stand covered 10 minutes before serving. Makes about 2.5 cups cooked rice.
Note: If the usage of electric rice cooker, combine 1 cup Nishiki Rice and 1.25 cups water in electric rice cooker pot. Continue as directed by rice cooker manufacturer.
